Whole Wheat Irish Soda Bread
We are continuing the month of March with more Irish inspirations. See our amazing green Île de Verte cocktail here. This whole wheat Irish soda bread is made with Einkorn flour. It is crazy good and we often eat it right out of the oven with a smear of salted butter or a drizzle of local honey. Mike is the bread maker in the family and he usually makes this on a Saturday morning and it never lasts the day, especially if our kids are home. It is extremely simple to throw together … no yeast or starters, proofing or other complications. It was inspired by a Paul Hollywood (The Great British Baking Show) soda bread recipe!
Whole Wheat Irish Soda Bread
375g plain Einkorn flour
125g all-purpose flour
1 tsp baking soda
1 tsp salt
420ml/15fl oz buttermilk
extra flour for dusting
Directions:
Preheat the oven to 425
In a large bowl, mix together the two types of flour, baking soda and salt.
Add the buttermilk and mix until a sticky dough forms. Use only one had to keep the other hand clean. It will be sticky.
Lightly flour a work surface and place the dough onto it.
Gently roll and fold the dough a couple of times to bring the mixture together. Do not knead.
Shape the dough into a ball. Flatten the ball gently with your hand. Score the dough with a deep cross dividing it into quarters. Dust the bread with flour.
Place onto a baking tray lined with parchment paper and bake for 35 minutes at 425. The loaf should be golden-brown.
Leave to cool on a wire rack. This is best eaten on the day of baking.
