Simple Plum Cake
This simple plum cake was inspired by the classic plum torte from Marian Burros at The New York Times. Many people have given it a new twist, but mine has less sugar, and uses einkorn flour as well as a few other tweaks to make it so delicious. This cake freezes well, so make two! I have also used other seasonal fruit (4 cups berries, peaches, cherries) with equally successful results. Below, I ran out of plums so I added some blueberries too.
Simple Plum Cake
½ cup sugar
½ cup unsalted butter, softened
1 teaspoon vanilla
½ cup Einkorn flour
½ cup unbleached all-purpose flour
1 teaspoon baking powder
2 eggs
Pinch of salt
8 plums, cut in eighths
Sugar and allspice for topping
Preheat oven to 350 degrees. In a bowl, cream together the sugar, butter and vanilla. Add the Einkorn flour, all-purpose flour, baking powder, eggs and salt, beat well. Spoon the batter into a 9” springform pan. Arrange the plums in a spiral pattern. Sprinkle with sugar and allspice. Bake for about 1 hour or until done.
