Quick Pickled Red Onions

Pickling raw red onions takes them from harsh and pungent to sweet and tangy. They transform into the most beautiful jewel toned pink color. These gems are perfect for topping on salads, sandwiches, tacos or bowls, giving your food a pop of flavor and color. The small amount of honey balances out the vinegar nicely. You are going to love these and they are so simple to make!

Quick Pickled Red Onions

1 medium red onion - thinly sliced

½ cup apple cider vinegar or distilled white vinegar or combination of both

½ cup water

1 tablespoon honey

1 teaspoon salt

Pack the thinly sliced onions into a one pint mason jar, leaving a ½ inch space at the top. Bring the vinegar, water, honey and salt to a simmer over medium heat until hot. Place the container in the sink (incase you spill some hot liquid) and gently pour the liquid over the onions. Let cool uncovered for 20 minutes. Cover and refrigerate the onions for later use.
