Simple Homemade Vinaigrette

 

This ridiculously easy vinaigrette is always on hand in my refrigerator. I usually make it with balsamic vinegar, but also switch it up with sherry vinegar, red wine vinegar or champagne vinegar. It always turns out great! It is so easy I almost don’t really call it a recipe…

1/4 cup of vinegar of choice

1 teaspoon Dijon mustard

3/4 cups good quality olive oil

salt and pepper to taste

Whisk the vinegar and mustard together in a small bowl. Slowly add the olive oil, whisking constantly. Salt and pepper to taste. Store in the refrigerator. Drizzle this on salads or anything that needs a punch of flavor.
